Beer Soup (Biersuppe) Ingredients

  • 6 cups beer

  • 2 egg yolks

  • 1 cup sour cream

  • 1 teaspoon cornstarch

  • 1 teaspoon white sugar

  • teaspoon salt

  • 4 slices French bread, cut into 1 inch cubes

  • 1 cup shredded Swiss cheese

How to Make Beer Soup (Biersuppe)

  1. In a medium saucepan over medium heat, bring beer, covered, to a boil.

  2. Meanwhile, in a bowl, beat together egg yolks, sour cream, cornstarch, sugar and salt until well blended. Transfer mixture to a large saucepan over low heat. Pour in hot beer, a little at a time, stirring until well combined. Do not boil.

  3. To serve, divide bread cubes into four warmed soup bowls. Sprinkle cheese over bread. Pour hot soup over all and serve piping hot.

  • This is a very old, traditional German recipe and is an acquired taste. Here are a couple of hints - use a light beer, nothing stout; try something cheap This lessens the beer taste considerably Also, add a little cinnamon - thats very traditional - 1/2 tsp should do it.

  • All I could taste was beer While normally that is a good thing...in this case it was not Beer was the only flavor, I even added garlic and some other flavorings and it still tasted bad.

  • We reduced the amount of beer we put in and it was STILL too much. It didnt taste like anything except for stale, hot beer.
